Parmesan Asparagus

My boyfriend loves this side dish. We both agree on the fact that Parmesan was sent from the heavens and it can add some “colour” to any dish. Its a new twist to your conventional boring greens. Also, its super quick and easy to make.

Ingredients:

  • 1 bundle of asparagus
  • parmesan
  • salt
  • pepper
  • 1 tablespoon olive oil

Directions:

There really aren’t any solid steps per se. Sometimes I like mine salty, other times I like it cheesy and without fail, each and every time it is epic.

  1. Preheat oven to 350F.
  2. Place asparagus in oven friendly dish.
  3. drizzle olive oil over the asparagus. Mix the asparagus to ensure that they are all covered in the oil.
  4. Sprinkle desired amount of parmesan, salt and pepper and mix to ensure that everything is evenly dispersed over asparagus.
  5. Place in the oven and cook for 12-15 minutes.

Cheesy Spinach Dip

As a child, when my mom introduced me to spinach dip, all I heard was S-P-I-N-A-C-H, and was instantly repulsed. I just could not imagine how anything with a spinach base could be tasty. After a bit of reasoning, I finally decided to give it a try and guess what? I fell head over heels, in love. I’m glad that I decided to trust and believe :p .

Ingredients:

  • half bag of frozen chopped spinach (500 g bag)
  • 1/2 block of cheddar cheese
  • 1 1/2 cups sour cream
  • 1 instant noodles seasoning packet – chicken flavour 

Directions:

  1. Boil and drain spinach. As the spinach boils, it absorbs a lot of water. For the best results, ensure that all of the water is completely drained.
  2. Grate the cheese and combine all of the ingredients.
  3. Heat the mixture for 90 seconds in the microwave.

Serve HOT with nacho chips!

Hearty Chilli Bowl

Chilli is definitely a family favourite; Its a fun meal, perfect for any occasion. In my household, we eat it with nachos, sour cream and cheddar cheese, but honestly, I think its good enough to eat alone if you really wanted to 😉 .

I made this for dinner last night and it was fabulous!

Ingredients:

  • 2 pounds lean ground beef
  • 1 teaspoon vegetable oil
  • 2 medium onions
  • 1 small bell pepper (preferably green)
  • 1 celery rib
  • 1 teaspoon of minced garlic
  • 1 can diced tomatoes (28 oz)
  • 1 can kidney beans (19 oz)
  • 2 cans tomato sauce (8 oz)
  • 4 tablespoons chilli powder
  • 1/2 teaspoon red pepper flakes
  • 1 1/2 tablespoons chilli oil
  • 2 tablespoons chilli sauce
  • 3 tablespoons brown sugar
  • salt (to taste)
  • pepper (to taste)

Directions:

  1. Cook onions, green pepper, celery and garlic in oil until the onions are transparent and peppers and celery are soft.
  2. Add ground beef to the mixture and cook until browned, then drain excess fat.
  3. Add the remaining ingredients and let simmer on medium heat.
  4. Let simmer on low heat for 1.5 – 2 hours and stir occasionally.

Don’t forget your nacho chips, sour cream and cheddar!

Sweet & Spicy BBQ Chicken

BBQ Chicken is one of my absolute favourites! You can hardly go wrong when making it and everyone loves it! If you are grilling, you can eat it straight off the grill, no sides needed. If you are preparing it to go alongside other dishes, pretty much anything goes.

Ingredients:

Chicken:

  • 1 kg chicken (the last time I made it, I used drumsticks – always fab!)
  • 1 tablespoon of all purpose seasoning
  • 1/2 tablespoon of powdered jerk seasoning (Maggi is my absolute favourite!)
  • 1/2 tablespoon minced garlic
  • 3 pinches of black pepper
  • 4 pinches of salt

Sauce:

  • Half bottle of original BBQ sauce (455 mL)
  • 1/2 cup ketchup
  • 1 tablespoon of Worchestire Sauce
  • 1 teaspoon jerk seasoning
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon parsley flakes
  • 1/2 cup brown sugar

Directions:

  1. Prepare chicken as you usually would (cleaning, removing skin etc.)
  2. Place chicken in baking pan and apply all purpose seasoning, jerk seasoning, minced garlic, salt and black pepper. Ensure that seasonings are evenly distributed among all chicken pieces.
  3. Place in the oven and set to low broil.
  4. Turn chicken pieces over after 15 minutes to ensure that both sides are browning.
  5. Begin to prepare sauce. Mix BBQ sauce, ketchup, and Worchestire sauce together
  6. Add jerk seasoning, red pepper flakes, parsley flakes and brown sugar to the mixture and  stir until smooth.
  7. After 25 minutes of cooking, cover the chicken in the sauce and leave in the oven for another 15 minutes.

Garlic Roasted Potatoes

This is honestly one of the quickest sides in the entire world to prepare. It perfectly compliments any meat dish well and taste absolutely fabulous!

I think the most amazing part is that all of the required ingredients are probably sitting in your cupboard waiting to be used.

Ingredients:

  • 6 large, white potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dry parsley
  • 1/2 teaspoon salt

Directions:

  1. Preheat oven to 350F.
  2. Dice potatoes into bite size pieces and place into a baking pan.
  3. Drizzle olive oil over potatoes. Mix potatoes to ensure that they are all covered.
  4. sprinkle garlic, parsley and salt over potatoes. Mix to ensure that the seasonings are evenly dispersed.
  5. Place into oven for 25-30 minutes.
  6. Occasionally check and stir potatoes to ensure that all sides are cooked.

Bahamian Macaroni Pie

There are so many ways to make macaroni pie, its almost unreal. For me, the Bahamian way is bomb and triumphs over all others. [I may or may not be bias :)]

I usually eat it as a side dish, alongside my greens and meat, but I have seen many people eat an entire plate of macaroni pie as a meal. So, I guess it is really up to you!

Ingredients:

  • 1 half box of Macaroni, ready cut noodles (500 g box)
  • 1 large onion
  • 1/2 bell pepper (you can use any colour, although my favourite is yellow)
  • 1 block of mild cheddar cheese
  • 1 tin evaporated milk (370 mL)
  • 2 eggs
  • 1 tablespoon of butter (can be substituted with margarine)
  • 1 1/2 teaspoon all purpose seasoning
  • salt to taste
  • black pepper to taste

Directions:

  1. Preheat oven to 350F.
  2. Boil the macaroni noodles (follow the directions on the package.)
  3. Finely chop the onion and bell pepper and grate the entire block of cheese. (Put aside until the noodles have finished boiling.)
  4. Once the noodles have boiled, pour all of the water out of the pot and return to stove on low heat. Add butter immediately and stir.
  5. Add the evaporated milk, eggs, chopped onion and bell pepper. Stir until everything is blended together. (The stove should remain on low heat)
  6. Add 3/4 of the grated cheese and stir until the cheese is completely melted.
  7. Add the all purpose seasoning, salt and pepper.
  8. Place the mixture in a baking dish. Use a spoon to make the top of the pie even, and sprinkle the remaining cheese on the top.
  9. Bake for 30-40 minutes or until the top is golden brown.

Mama’s Split Pea Soup

To be honest, I have never been much of a soup person. However, whenever my grandma makes Split Pea Soup, I could never resist it. For me, it is that “welcome home” meal, that “get Jarra to do chores” meal, that “I just love my favourite grandchild” meal.

I decided to make it for dinner last night and it came out great! So, uhm, get on it…

Ingredients:

  • Half bag of yellow split peas (Usually 907g bag)
  • 1 quater pound – 1 half pound of salt beef (can use ham as a substitute)
  • 1 tablespoon of vegetable oil
  • 1 large onion
  • 1 bell pepper (any colour)
  • 1 ripe tomato
  • 2 celery stalks
  • 1 large potato
  • 2 cobs of corn (optional)
  • 1 teaspoon of thyme
  • salt and pepper to taste

Directions:

  1. Boil spilt peas in 3 cups of water. The water will boil out, keep adding 1 cup as needed, until peas are completely dissolved. (When, completed, there should be no trace of peas AT ALL. It should look like yellow water) Stir often, so that it does not burn.
  2. Cut the salt beef into 2 inch chunks and submerge into another pot of boiling water. It is SALT beef, thus it is naturally salty. You will need to repeat this step at least three times. (Boil beef in water for about 15 minutes, pour water off, do it again.)
  3. As the peas and beef are boiling, dice the onion, bell pepper and celery. Fry in vegetable oil until the onion is transparent and the bell pepper and celery are soft.
  4. Dice the tomato, and add into the frying pan. The mixture should begin to look like paste.
  5. Add 1/2 teaspoon of thyme to the vegetable mixture and black pepper to taste.
  6. When the peas have completely boiled out, add the vegetable mixture, beef, corn and remaining thyme to it. Let the soup simmer for 15 minutes on low heat and stir often.
  7. Peel and cut potatoes, add to the mixture and let simmer for another 20 minutes on low heat. DO NOT FORGET TO STIR.
  8. Taste soup before adding salt. The salt from the beef gives it flavour, and you do not want to over salt.
